We caught up with Peter Sidwell in his new cookery school, <strong>Keswick<\/strong> <strong>Cookery School<\/strong>, located just outside <strong><a href=\"https:\/\/www.lakelovers.co.uk\/keswick-cottages.html\" target=\"_blank\" rel=\"noopener\">Keswick<\/a><\/strong>, the jewel of the Lake District to find out more.<\/p>\n<h2>Hosting a dinner party when on holiday<\/h2>\n<p>Pete\u2019s Simply Good Food TV has become \u2018the Netflix of food programming\u2019. His 25-years in a chef\u2019s apron also includes an award-winning restaurant, judge on ITV\u2019s Britain\u2019s Best Bakery and more recently, private chef for an array of high-profile dinners from sporting superstars of the UK Premiership to international politicians, including a former UK Prime Minister and His Royal Highness The Prince of Wales. Here are his tips;<\/p>\n<ol>\n<li><em>Keep it simple, it\u2019s always the best way.<\/em><\/li>\n<li><em>The best cooking starts with great shopping so if you are putting all your effort into a dish buy their best quality, its usually local.<\/em><\/li>\n<li><em>If you are doing a three-course dinner party, make sure it\u2019s a cold starter and a cold dessert, that way you only have to cook the main course and you\u2019re not spending all your time in the kitchen.<\/em><\/li>\n<li><em>For a great starter just put out lots of amazing products from the deli, cured meats, olives, breads, dips and cheese. Not only is it easy but it\u2019s light, tasty and out takes the pressure off you.<\/em><\/li>\n<li><em>Make something that can sit in the oven keeping warm without spoiling as if you are all enjoying yourself chatting with your friends you don\u2019t want to be worrying about cooking until it\u2019s time to eat.<\/em><\/li>\n<\/ol>\n<blockquote><p><em>\u201cHappy cooking!\u201d<\/em><\/p><\/blockquote>\n<h3><img decoding=\"async\" class=\"alignnone size-medium wp-image-1516775 b-lazy\" src=\"https:\/\/www.lakelovers.co.uk\/blog\/wp-content\/uploads\/sites\/15\/2020\/10\/BBQ-768x307.png\" sizes=\"(max-width: 768px) 100vw, 768px\" srcset=\"https:\/\/www.lakelovers.co.uk\/blog\/wp-content\/uploads\/sites\/15\/2020\/10\/BBQ-768x307.png 768w, https:\/\/www.lakelovers.co.uk\/wp-content\/uploads\/2019\/07\/BBQ-440x176.png 440w, https:\/\/www.lakelovers.co.uk\/blog\/wp-content\/uploads\/sites\/15\/2020\/10\/BBQ.png 1000w\" alt=\"\" width=\"768\" height=\"307\" data-src=\"https:\/\/www.lakelovers.co.uk\/blog\/wp-content\/uploads\/sites\/15\/2020\/10\/BBQ-768x307.png\" \/><\/h3>\n<h3>Seasonal Ingredients<\/h3>\n<p>Peter Sidwell\u2019s cookery is influenced by a longer than expected stint in and around Italian kitchens in 2009, \u00a0but also the seasonal, local ingredients of his adopted home, the Lake District. Peter moved to the Lakes in 2003, where he now lives with his wife and two young children.<\/p>\n<p>His kitchen garden is full of character and stories as you\u2019d expect from this charismatic TV chef. There\u2019s the \u2018less organised\u2019 section that his young daughter \u2018helped\u2019 with and there\u2019s the wild Tuscan fennel, brought back from his travels. And his caraway plant, with gorgeous little pods, which Pete snaps opens eagerly for us to taste, is clearly dear to the Keswick Cookery School Kitchen \u2013<em> \u201ccaraway is a key ingredient in Hawkshead Wig Bread, which is a little-known Cumbrian bread.\u201d\u00a0<\/em><\/p>\n<p>Just outside Keswick, Pete runs Keswick Cookery School, offering masterclasses in fish, meat, baking and dessert cookery for anyone looking to up the stakes with their cooking game. With an impressive range of cookery gadgets, the following classes are particularly good fun;<\/p>\n<ul>\n<li>Wood Burning Pizza Oven<\/li>\n<li>Making Sausage and Salami<\/li>\n<li>Dim Sum and Asian Cookery<\/li>\n<li>Grill on the Hill using the game-changing Kamodo Joe BBQ<\/li>\n<\/ul>\n<p>Pete\u2019s cookery school has hosted large corporate groups, leaving London behind to learn about seasonality and what makes Lake District such a foodie mecca. I like to toast my banana bread and finish with a little butter for breakfast. It\u2019s also the perfect cake for packing up to enjoy on a picnic with the family.\u201d\u00a0<\/span><\/em><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1532369 b-lazy\" src=\"https:\/\/www.lakelovers.co.uk\/blog\/wp-content\/uploads\/sites\/15\/2020\/10\/banana.png\" sizes=\"(max-width: 600px) 100vw, 600px\" srcset=\"https:\/\/www.lakelovers.co.uk\/blog\/wp-content\/uploads\/sites\/15\/2020\/10\/banana.png 600w, https:\/\/www.lakelovers.co.uk\/wp-content\/uploads\/2019\/07\/banana-440x220.png 440w\" alt=\"\" width=\"600\" height=\"300\" data-src=\"https:\/\/www.lakelovers.co.uk\/blog\/wp-content\/uploads\/sites\/15\/2020\/10\/banana.png\" \/><\/p>\n<h4>Here\u2019s how<\/h4>\n<ol>\n<li>Place the butter and sugar into a mixing bowl and whisk together until nice and light and fluffy.<\/li>\n<li>Add the eggs into the mixture one at a time making sure you mix together before adding the next egg as this is key to helping the mixture not to split.<\/li>\n<li>In a small bowl, mash the bananas up into a paste and add to the cake mixture.<\/li>\n<li>Sieve in the flour and add the lemon zest and pumpkin seeds.<\/li>\n<li>Finally, fold the mixture together with a metal spoon, try not to over mix as the less you mix the lighter the cake when it\u2019s baked.<\/li>\n<li>Pour the cake mixture into a non-stick 2lb loaf tin.<\/li>\n<li>Squeeze the lemon juice over the oats and mix together. It will stop the oats burning and you will get a lovely texture to the top of the cake.<\/li>\n<li>Bake in a pre-heated fan oven at 170c for 25-30 minutes.<\/li>\n<\/ol>\n<h4>Download our Banana Bread recipe <a href=\"https:\/\/www.lakelovers.co.uk\/wp-content\/uploads\/2019\/07\/Lakelovers-Banana-Bread-min.pdf\">here<\/a> to save for later.<\/h4>\n<h4><b>RASPBERRY<\/b><strong>\u00a0LEMONADE<\/strong><\/h4>\n<p><em>\u201cRaspberries are just starting to ripen in my kitchen garden now and I just love making recipes with them that allow me to enjoy the wonderful fresh flavour of raspberries all year round. I always make sure I take my kids raspberry picking every year as it has become a family tradition to find a pick your own farm and make a day of it. This recipe takes lemon and raspberries and puts them together to make a delicious lemonade cordial that can be enjoyed by all the family as it\u2019s perfect for mixing with sparkling water or can be added to a Gin and Tonic for an alternative G&amp;T, the choice is yours.\u201d<\/em><\/p>\n<p>Makes 250ml of cordial approximately<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1532317 b-lazy\" src=\"https:\/\/www.lakelovers.co.uk\/blog\/wp-content\/uploads\/sites\/15\/2020\/10\/raspberry2.png\" sizes=\"(max-width: 600px) 100vw, 600px\" srcset=\"https:\/\/www.lakelovers.co.uk\/blog\/wp-content\/uploads\/sites\/15\/2020\/10\/raspberry2.png 600w, https:\/\/www.lakelovers.co.uk\/wp-content\/uploads\/2019\/07\/raspberry2-440x220.png 440w\" alt=\"\" width=\"600\" height=\"300\" data-src=\"https:\/\/www.lakelovers.co.uk\/blog\/wp-content\/uploads\/sites\/15\/2020\/10\/raspberry2.png\" \/><\/p>\n<p>&nbsp;<\/p>\n<h4>Here\u2019s how<\/h4>\n<ol>\n<li>This recipe is nice and simple, just squeeze the lemon juice into a medium-sized pan with the raspberries and the sugar.<\/li>\n<li>Using a wooden spoon mix together until the sugar is completely mixed in. It\u2019s really important that you mix it all together as you don\u2019t want the sugar to caramelise when you place it on the heat.
